Zucchini pasta

This is one of the dishes that we eat on a regular basis. It’s super easy to do and all you need is 4 main ingredients.
I don’t remember where I saw this recipe long time ago… The measurements are not 100% accurate, it’s an experiment that each of you will have to make it to their own taste.

Ingredients

250g spaghetti
3 medium zucchini
1 cup parmesan – freshly grated + more to serve
2-3 medium garlic cloves
salt and pepper to taste

Instructions

Peel the zucchini and grate them. Remove as much juice as you can from them by squeezing the grated zucchini in your hand.

Boil the pasta as per package instructions.

In the meantime, heat the oil in a large pan. Add the garlic and cook for about 1 minute. Add the zucchini, a pinch of salt, and cook for about 5 minutes.
Reduce the heat to simmer, then add the cooked pasta to the pan and stir. Gradually add parmesan and stir thoroughly after each time.

Add salt and pepper to taste.
Serve while still warm.
