I’ve been craving for some ribs for a while. Not to mention I have a slow cooker that I don’t use much… So it was about to time to give it a try and the result was delicious!
I tried to use the slow cooker before and everything tasted the same. The difference is this recipe is with dry rub, so it won’t change the taste of the meat, it will just make it juicy. The BBQ sauce is the key and it’s prepared on the stove. Original recipe can be found here.
Ingredients
2 full rack baby back ribs
1 can regular Coke
Dry rub
3 tbsp brown sugar
1 1/2 tbsp paprika
1 1/2 tbsp salt
1 1/2 ground pepper black
1/2 tsp garlic powder
Homemade BBQ sauce
1 cup ketchup
1 cup vinegar
3/4 cup brown sugar
1/2 tsp salt
1/4 tsp garlic powder
1/4 tsp onion powder
1/4 tsp Tabasco sauce
Mashed potatoes
Potatoes
Milk
Butter
Salt and Pepper to taste

Instructions
Mix all the dry rub ingredients in a bowl.
Prepare the ribs by removing the skin on top. Rub them with the dry rub all over the front and the back,
Put them in the slow cooker, together with Coke. Cook on low for 7-8 hours or high for 4 hours.
While the ribs are cooking, prepare your BBQ sauce. Add all ingredients into a saucepan and whisk until combined. Bring to boil, then simmer on low for 45 minutes.
Once the ribs are cooked, remove them from the slow cooker and place them into a baking sheet. Brush with BBQ sauce and broil in the oven for 1-2 minutes until caramelized on the top rack.
Serve with additional BBQ sauce, mashed potatoes and coleslaw (recipe here).

Mashed potatoes
30min before the ribs are done, prepare your mashed potatoes. Cut your potatoes in small 1/2” cubs and boiled them on the stove. They will be ready when you can pierce them with a fork. Remove them from water and add them into a bowl where you can use your handheld food processor to smash them. Add milk and butter until you get the texture of your liking. Add salt and pepper to taste.
