This is my mom recipe. Better said “my mom’s list of ingredients” as she never measures the quantities when she makes “clatite”.
I started writing down the ingredients as I was adding stuff, so this is the result.
Ingredients
1 1/2 cup all-purpose flour + 2 tbsp
1/2 tbsp granulated sugar
2 packages vanilla sugar
1/4 tsp salt
2 eggs
1/2 tbsp vanilla
1/2 cup milk
250ml sparking water
oil to cook
jam, nutella and fruits to serve.
Instructions
Mix all the dry ingredients (flour, sugar, vanilla sugar, salt) in a bowl. Add the 2 eggs and stir.
Gradually add milk, vanilla and sparkling water, whisking properly after each addition. At the end you should have a smooth, uniform texture. If the batter is too liquid, add 1 tbsp flour. The batter should be a bit ticker than water or milk.
Heat a non-greasy pan over medium heat. Pour 1-2 drops of oil, let it warm for about 5 sec, then pour 1/2 ladle of batter into the pan, while holding the pan at an angle. With circular moves of the pan, spread the batter evenly.

When the crepe is ready to turn, the sides will normally lift away from the pan. However, you should check them regularly, since it depends on the temperature/power of your stove. Flip and cook for about 30sec.
Repeat with remaining batter.


Serve immediately.
