The first time I tried this soup it was uncle Richard who made it. Of course I had to give it a try to do it myself. I would say it is similar to pho soup.
The recipe is from one French recipe book he had. I modified it already to my taste.
Ingredients
2 packs ramen noodles or Konjac for keto
2 cups Red Napa Cabbage (white Napa Cabbage works as well)
1 lb beef sirloin cut in long stripes
1/2 cups fresh cilantro
optional: jalapeno or chili flakes; shitake mushrooms
For broth:
6 cups beef broth
2 tbsp minced ginger
1 tbsp fish sauce
2 garlic cloves minced
1 pinch of cinnamon
1 anise star
1/2 lime (juice)
salt and pepper to taste
Instructions
Mix all broth ingredients in a pot. Bring to boil on medium-high heat. Then cover and let it simmer for 20 minutes.
In the meantime, prepare your other ingredients: cut the beef, Napa cabbage and boil the noodles (or rinse if using Konjac).

When the 20 minutes have passed, add the noodles, cabbage and beef to the broth. Cook for 5 minutes.
Split the soup in bowls. Add cilantro and the chili flakes. Let it rest for 5 minutes before serving.
