This is the best marinated chicken ever! And it was me who came up with the recipe! I now keep some pen and paper when I cook, so when I experiment like this I write down the ingredients and measures until I come up with something to my taste.

There is a secret ingredient in this marinade: Maple Dijon mustard from Au Pied de Cochon (you can purchase it here). I guess you can try a combination of Dijon mustard with full grains and maple syrup.

Ingredients for chicken
1-2 chicken breasts
1 1/2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp honey
1 tbsp Dijon maple mustard (with full mustard grains)
1/2 tsp paprika
1/2 tsp garlic powder (or fresh garlic for more flavor)
1/2 tsp Herbamare (or herbed sea salt)
pepper to taste
Instructions for chicken
Mix all ingredients together in a bowl. Add the chicken and toss until chicken is fully coated with marinade.
Cover with plastic wrap and let it cool in the fridge for 2-3 hours.
Grill on BBQ the way you normally grill your chicken.
For the side dish, I used red Napa cabbage instead of white, because this is what I received in the basket. The original recipe is with regular Napa cabbage and you can find it here.

Since I didn’t know how it will taste, I added some veggies on the side just in case. My hubby and I were starving and I didn’t want to risk it 🙂

Ingredients for the Napa cabbage
2 tbsp olive oil
2 tbsp cider vinegar
1 tbsp brown sugar
1 tsp whole-grain Dijon mustard
1 tsp minced garlic
1/4 tsp salt
1/2 head red Napa cabbage cut lengthwise into quarters

I started with the veggies, since they needed longer cooking than the Napa cabbage.

I put them in the oven for 15 minutes and then I added the cabbage, as per instructions below.
Instructions
Preheat oven and pan to 450 F.
Combine first 7 ingredients in a small bowl.
Coat cut sides of cabbage with cooking spray. Place cabbage, cut sides down in a pan. Bake for 6 minutes. Turn cabbage onto other cut side; bake an additional 6 minutes.
Remove pan from oven. Heat broiler to high.
Brush cabbage evenly with oil mixture; broil 3 minutes or until browned and caramelized.

Do not broil the veggies at the end! They will become too dry!
