Banana bread

This is as good as everyone says!

Yesterday evening, I realized I had 3 overripe bananas.

My natural reaction: search for a recipe to try. I found this one on Allrecipes super voted, so I gave it a try.

Ingredients

2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 butter at room temperature
3/4 cup brown sugar
2 eggs, beaten
3 overripe bananas mashed

If you’re like me and you haven’t used brown sugar in a while, you might discover that it turned into one hard giant ball. This means the sugar wasn’t stored in a air sealed container and the humidity from the air made it sticky.

How to dry brown sugar
Preheat the oven at 300 degrees.
Put some parchment on cookie sheet and put your sugar ball on it. Ideally try to break it in smaller pieces as possible. Then put it in the oven for 1-2min, take it out and break the sugar again in smaller pieces. Repeat 1-2 times until you are satisfied with the result.

Instructions

Preheat oven to 350 degrees. Lightly grease a 9×5 loaf pan.

In a large bowl combine flour, baking soda and salt.
In a separate bowl cream together butter and brown sugar. Make sure the sugar doesn’t have lumps in it. Stir in the eggs, then the mashed bananas (with fork) until well blended.

Stir banana mix into flour mixture; stir just to moisten. Pour batter into prepared loaf.

Bake in preheated oven until a toothpick inserted into the center of the loaf comes out clean (50 min for my stove).

Let bread cool in the pan for 10min before turning it on a wire rack.
