Rice pilaf

The recipe is something I came up with myself, while actually trying to do a risotto. In the end it turned out to be more of a rice pilaf.
I guess a failed experiment turned out to be something yummy and now my hubby’s favorite way of eating rice.

Ingredients

  • 8oz Arborio rice
  • 5 tbsp vegetable oil
  • 2 medium onions
  • 3 1/2 tsp Vegeta
  • Boiled water

Vegeta is an all purpose seasoning mix very common in the Romanian cuisine.

Instructions

Fill completely a kettle with water and let it boil. In the meantime, cut the onions in small pieces.

Heat the oil in a pan on a medium-low fire. Add the onions and cook for 2-3 minutes or until they become soft. Add 2 tsp of Vegeta and cook for another minute.

Add the rice in the pan and cook for another 1-2 minutes, until it absorbs some of the oil and flavor from the onions. Add a bit of boiled water – just enough to cover a bit the rice. Make sure you stir from time to time to avoid the rice sticking to the bottom of the pan.

When the rice absorbed all the water, add a bit more boiled water and stir. Repeat the process until the rice is fully cooked. Add remaining Vegeta to your taste.

It is important that the water is hot, so that it doesn’t stop the cooking process.
Also, if you are in a bit of a hurry, you can do everything on medium heat, but make sure you stir frequently.

I like to serve it with sausages. From time to time I also make a salad (dressing recipe here).
