My first interaction with raclette (the dish) was in La Savoie region in France. Raclette is all about the cheese and that’s what makes the difference between a good meal and an ordinary one. What I like about it is that you can pretty much satisfy all tastes at the dinner table.
The first thing you will need is the machine to melt the cheese. The “real deal” might be harder to find, but the regular ones with a stone for grilling work just fine.
Ingredients
- Buy a good selection of cheese (raclette – black pepper, smoked, paprika etc.) If you can find Tomme de Savoie it’s better but any other semi-hard cheese will do
- Your favorites veggies (or whatever you have in the fridge) to grill or to mix with cheese. Small potatoes are preferable
- Your meat types (steak, fillet mignon, chicken breast, pork) – cut in long strips
- Dry meat (salami, ham, prosciutto…)
- Sauces: garlic mayonnaise, bbq sauce for steak, curry sauce… (any other sauce you like)
- Something sour: cornichon, pickled onions, green salad with balsamic vinegar…
- Baguette
It might look like a long list, but in fact you choose what you like. The only things that should not miss is the cheese.
Preparation
Plug your raclette machine and let it heat while you prepare the rest.
I started with the veggies I had in the fridge:

As you can see, I didn’t have small potatoes, so I just peeled the ones I had, cut them in small cubes and put them to boil.
Peel everything else, cut in small pieces to fit your cheese melting thingy and microwave for 2-3 minutes (depending how big are your cubes). You can skip the microwaving but it will just take longer for the veggies to cook.
Garlic mayonnaise
1-2 garlic cloves
Mayonnaise
Mince the garlic and mix it with your regular mayonnaise. Add as much mayo as you want to make it to your taste.
Don’t make too much though, you can eat it only the next day. The day after it starts changing taste already so you might have to trash it…
Salad dressing
1 tbsp olive oil
1 tbsp balsamic vinegar
1 pinch of yellow curry
Mix olive oil and vinegar in a small jar. Add a pinch of yellow curry for some interesting taste (optional). Add it to your regular green salad.
